{"id":55,"date":"2021-09-12T10:54:18","date_gmt":"2021-09-12T00:54:18","guid":{"rendered":"http:\/\/admin.brucesheb.familyds.net\/wordpress\/?p=55"},"modified":"2021-10-10T13:45:40","modified_gmt":"2021-10-10T02:45:40","slug":"popeye-dip","status":"publish","type":"post","link":"https:\/\/brucesheb.familyds.net\/wordpress\/2021\/09\/12\/popeye-dip\/","title":{"rendered":"Popeye Dip"},"content":{"rendered":"\n<p>This dip also works really well mixed with penne pasta, and apparently also works well in a cold roast-chicken sandwich, or tucked into a chicken breast before wrapping in bacon and roasting.<br>Anyway, we tried it with pasta and as a paste on crackers with walnuts and sun-dried tomatoes.<br>Serves 2-4<\/p>\n\n\n\n<ul><li>1 garlic clove, crushed.<\/li><li>2-3 handfuls of fresh spinach leaves (trim the stems if necessary; we didn&#8217;t bother)<\/li><li>200-250g Welsh goat&#8217;s cheese<\/li><li>1 lemon zest and juice<\/li><li>A little bit of parmesan, finely grated<\/li><li>Freshly ground black pepper<\/li><\/ul>\n\n\n\n<h2>Method<\/h2>\n\n\n\n<ol><li>Splash a bit of olive oil in the frying pan and saute the garlic until just soft. <\/li><li>Add the spinach and pinch of salt (doesn&#8217;t have to be too much, as the cheese will be plenty salty).
