{"id":50,"date":"2021-09-12T10:43:24","date_gmt":"2021-09-12T00:43:24","guid":{"rendered":"http:\/\/admin.brucesheb.familyds.net\/wordpress\/?p=50"},"modified":"2021-10-10T13:45:48","modified_gmt":"2021-10-10T02:45:48","slug":"carrot-soup","status":"publish","type":"post","link":"https:\/\/brucesheb.familyds.net\/wordpress\/2021\/09\/12\/carrot-soup\/","title":{"rendered":"Carrot Soup"},"content":{"rendered":"\n<p>Serves 2 reasonably generously as long as you have plenty of bread to go with it<\/p>\n\n\n\n<h2>Ingredients<\/h2>\n\n\n\n<ul><li>360g carrots, peeled and finely chopped<\/li><li>80g onions, finely chopped&amp;nbsp;<\/li><li>15g root ginger, peeled and chopped<\/li><li>280ml chicken stock<\/li><li>175ml water<\/li><li>150ml whipping cream<\/li><li>Juice of 1\/2 lime<\/li><li>Salt and coarsely ground black pepper<\/li><\/ul>\n\n\n\n<p>Tip: Root ginger is freshest when its skin is smooth, silky and a light cream colour. To make it easier to peel, try and buy a piece that doesn&#8217;t have too many knobbly bits.<\/p>\n\n\n\n<h2>Method<\/h2>\n\n\n\n<ol><li>Heat the pan and add a little vegetable oil. Add 260g of the carrots, the onions and ginger and cook for 5 minutes.<\/li><li>Pour on stock and water and cook for 10 minutes.<\/li><li>Puree soup with hand blender. Add remaining 100g carrots.<\/li><li>Stir in cream, lime juice and cook for 5 minutes.<\/li><li>Season with salt and pepper.<\/li><\/ol>\n\n\n\n<h3>To make your soup extra special<\/h3>\n\n\n\n<p>Adding a dollop of creme fraiche or Greek yogurt makes this soup more indulgent, whilst adding a slight sharpness to the well rounded flavours.
