{"id":41,"date":"2021-09-12T08:23:53","date_gmt":"2021-09-11T22:23:53","guid":{"rendered":"http:\/\/admin.brucesheb.familyds.net\/wordpress\/?p=41"},"modified":"2021-10-10T13:46:03","modified_gmt":"2021-10-10T02:46:03","slug":"carrot-cake","status":"publish","type":"post","link":"https:\/\/brucesheb.familyds.net\/wordpress\/2021\/09\/12\/carrot-cake\/","title":{"rendered":"Carrot Cake"},"content":{"rendered":"\n<p>This is an absolute winner! <\/p>\n\n\n\n<p><strong>If doing double-layer, do 50% more.<\/strong><\/p>\n\n\n\n<h2>Ingredients<\/h2>\n\n\n\n<h3>Base<\/h3>\n\n\n\n<ul><li>2 eggs<\/li><li>175g muscovado sugar<\/li><li>200ml sunflower oil<\/li><li>200g grated carrot<\/li><li>225g wholemeal flour<\/li><li>1tsp baking soda<\/li><li>2tsp cinnamon<\/li><li>1tsp nutmeg<\/li><li>115g walnuts<\/li><\/ul>\n\n\n\n<h3>Topping<\/h3>\n\n\n\n<ul><li>115g half-fat cream cheese<\/li><li>4tbsp margarine<\/li><li>100g icing sugar<\/li><li>1 tsp grated lemon rind<\/li><li>1 tsp grated orange rind<\/li><\/ul>\n\n\n\n<h2>Method<\/h2>\n\n\n\n<ol><li>Pre-heat the oven to 190c.<\/li><li>Beat the eggs. Add the sugar and oil. Add the carrot.<\/li><li>Sift in the flour, baking soda, and spices, then add the walnuts. Mix.<\/li><li>Put it in a well-greased baking tin and cook for<\/li><li>If using one baking tin, 40-50 minutes<\/li><li>If using two tins, 30-40 minutes<\/li><li>Let it cool for plenty of time before you add the topping<\/li><li>For the topping, mix all the topping ingredients together. Put on the cake when it has cooled completely.<\/li><li>We think that to put a layer of (best quality) lemon curd between the two layers of the cake makes it heavenly<\/li><\/ol>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is an absolute winner!
