{"id":199,"date":"2021-10-06T20:32:02","date_gmt":"2021-10-06T09:32:02","guid":{"rendered":"http:\/\/admin.brucesheb.familyds.net\/wordpress\/?p=199"},"modified":"2021-10-10T13:38:03","modified_gmt":"2021-10-10T02:38:03","slug":"moroccan-lamb-soup","status":"publish","type":"post","link":"https:\/\/brucesheb.familyds.net\/wordpress\/2021\/10\/06\/moroccan-lamb-soup\/","title":{"rendered":"Moroccan Lamb Soup"},"content":{"rendered":"\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/img.taste.com.au\/etTwjIpk\/w643-h428-cfill-q90\/taste\/2016\/11\/moroccan-lamb-soup-85046-1.jpeg\" alt=\"\"\/><\/figure>\n\n\n\n<h2><strong>Ingredients<\/strong><\/h2>\n\n\n\n<ul><li>1 tablespoon olive oil<\/li><li>2 large (900g) lamb shanks, or a lamb leg after most of the meat has been taken off<\/li><li>1 medium brown onion, chopped<\/li><li>2 garlic cloves, crushed<\/li><li>2 medium carrots, peeled, chopped<\/li><li>2 celery stalks, chopped<\/li><li>2 teaspoons ground cumin<\/li><li>2 teaspoons ground coriander<\/li><li>1\/2 teaspoon ground ginger<\/li><li>1\/2 teaspoon ground cinnamon<\/li><li>400g can diced tomatoes<\/li><li>1 tablespoon Massel beef style stock powder<\/li><li>1\/2 cup dried green lentils, rinsed<\/li><li>1\/4 cup chopped fresh flat-leaf parsley leaves<\/li><\/ul>\n\n\n\n<h2><strong>Method<\/strong><\/h2>\n\n\n\n<ol><li>Heat oil in a large saucepan over medium-high heat. Add shanks. Cook, turning, for 6 to 8 minutes or until browned. Transfer to a plate (not necessary if using an old leg bone &#8211; already cooked)<\/li><li>Add onion, garlic, carrot and celery to pan. Cook for 5 minutes or until onion has softened. Add cumin, coriander, ginger and cinnamon. Cook for 1 minute or until fragrant. Return shanks to pan with tomato, stock powder and 6 cups cold water. Bring to the boil. Reduce heat to low. Simmer, partially covered, for 1 hour. Add lentils. Simmer, partially covered, for 30 minutes or until lentils and shanks are tender.<\/li><li>Remove pan from heat. Remove shanks. Remove and discard bones and fat. Shred meat. Add meat and parsley to pan. Return pan to heat. Simmer for 5 minutes or until heated through.
