{"id":170,"date":"2021-09-28T08:53:15","date_gmt":"2021-09-27T22:53:15","guid":{"rendered":"http:\/\/brucesheb.familyds.net\/wordpress\/?p=170"},"modified":"2021-10-10T13:39:05","modified_gmt":"2021-10-10T02:39:05","slug":"beef-nachos","status":"publish","type":"post","link":"https:\/\/brucesheb.familyds.net\/wordpress\/2021\/09\/28\/beef-nachos\/","title":{"rendered":"Beef nachos"},"content":{"rendered":"\n<p>FEEDS SIX!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/img.taste.com.au\/1VSMzP0m\/w643-h428-cfill-q90\/taste\/2017\/01\/bens-beef-and-bean-nachos_1980x1320-120231-1.jpg\" alt=\"\"\/><\/figure>\n\n\n\n<h2>INGREDIENTS<\/h2>\n\n\n\n<h3>Sauce<\/h3>\n\n\n\n<ul><li>3 teaspoons cumin seeds<\/li><li>3 teaspoons coriander seeds<\/li><li>2 tablespoons extra virgin olive oil<\/li><li>500g beef mince<\/li><li>1 red onion, finely chopped<\/li><li>1\/4 teaspoon ground cinnamon<\/li><li>5cm strip orange rind<\/li><li>400g can crushed tomatoes<\/li><li>185ml (3\/4 cup) water<\/li><li>400g red kidney beans, drained, rinsed<\/li><li>2 x 175g pkts plain corn chips<\/li><li>160g (2 cups) coarsely grated cheddar<\/li><li>Sour cream, to serve<\/li><li>Sliced fresh red chilli or green chilli, to serve<\/li><li>Refried beans (optional)<\/li><\/ul>\n\n\n\n<h3>GUACAMOLE<\/h3>\n\n\n\n<ul><li>2 avocados, coarsely chopped<\/li><li>1 fresh green jalapen~o, deseeded, finely chopped<\/li><li>1\/4 white onion, finely chopped<\/li><li>2 tablespoons fresh coriander, chopped<\/li><li>2 teaspoons fresh lime juice<\/li><\/ul>\n\n\n\n<h3>TOMATO SALSA<\/h3>\n\n\n\n<ul><li>2 tomatoes, finely chopped<\/li><li>1\/2 small red onion, finely chopped<\/li><li>1\/2 cup fresh coriander, chopped<\/li><li>2 teaspoons fresh lime juice<\/li><\/ul>\n\n\n\n<h2>METHOD<\/h2>\n\n\n\n<ol><li>Fry the cumin and coriander in a frying pan over medium heat for 1-2 minutes or until aromatic. Transfer to a mortar and pound with a pestle until coarsely crushed.<\/li><li>Heat the oil in a large frying pan over medium-high heat. Add the mince and cook, breaking it up with a wooden spoon, for 5 minutes or until browned. Add the onion and cook, stirring, for 5 minutes or until soft.<\/li><li>Add the cumin mixture, cinnamon and orange rind. Cook for 1 minute or until aromatic.<\/li><li>Add the tomato, water and half the beans. Reduce the heat to low and simmer for 20 minutes or until the sauce reduces and thickens. Stir in the remaining beans.<\/li><li>Preheat the oven to 180 degrees (160 fan forced)<\/li><li>Meanwhile, for the guacamole, place the avocado in a bowl. Use a fork to roughly mash. Add jalapen\u0303o, onion, coriander and lime and stir until well combined. Season.<\/li><li>To make the salsa, combine all the ingredients in a bowl. Season.<\/li><li>Spread the corn chips over a baking tray. Bake for 10 minutes or until warmed through.<\/li><li>Heat the refried beans<\/li><li>Preheat the oven grill on medium-high. Transfer corn chips to 4 ovenproof dishes. Spoon beef mixture over and sprinkle with cheese. Grill for 2-3 minutes or until cheese melts. Top with guacamole, tomato salsa and sour cream.
