{"id":118,"date":"2021-09-14T23:19:20","date_gmt":"2021-09-14T13:19:20","guid":{"rendered":"http:\/\/brucesheb.familyds.net\/wordpress\/?p=118"},"modified":"2021-10-10T13:40:20","modified_gmt":"2021-10-10T02:40:20","slug":"curried-sausages","status":"publish","type":"post","link":"https:\/\/brucesheb.familyds.net\/wordpress\/2021\/09\/14\/curried-sausages\/","title":{"rendered":"Curried Sausages"},"content":{"rendered":"\n<p><img decoding=\"async\" loading=\"lazy\" width=\"400\" height=\"324\" src=\"http:\/\/img.sndimg.com\/food\/image\/upload\/w_614,h_461,c_fit\/v1\/img\/recipes\/19\/89\/01\/picpwntW4.jpg\" alt=\"\"><\/p>\n\n\n\n<h2>Ingredients<\/h2>\n\n\n\n<ul><li>8 sausages (beef, chicken, lamb or pork sausages)<\/li><li>1 tbsp oil<\/li><li>2 onions<\/li><li>2 garlic cloves<\/li><li>1 tbsp grated fresh ginger<\/li><li>2 carrots, quartered, then cut into 1\/2 in chunks<\/li><li>2 potatoes, diced<\/li><li>1 tbsp curry powder<\/li><li>2 tbsp tomato paste<\/li><li>2 tbsp fruit chutney<\/li><li>1\/2 cup apple &nbsp;sauce<\/li><li>1 cup chicken stock chicken stock<\/li><li>400ml can coconut milk<\/li><li>1 cup frozen peas (optional)<\/li><li>salt and pepper<\/li><\/ul>\n\n\n\n<h2><strong>DIRECTIONS<\/strong><\/h2>\n\n\n\n<ol><li>Cover the sausages with cold water; bring to the boil and simmer about 5 minutes.<\/li><li>Drain, cool, remove skins and cut each into 4 or 5 pieces.<\/li><li>Heat the oil in a large saucepan and fry the onion, garlic and ginger, carrots and potatoes, stirring until the onions are soft. Add the curry powder and cook a minute or two.<\/li><li>Add the tomato paste, chutney, apple sauce, stock and coconut milk. Stir well, then return the sausage chunks to the saucepan.<\/li><li>Bring too the boil then cover and simmer about 45 minutes. Remove the lid and allow to cook about 15 minutes more to reduce the sauce a bit.
